Ingredients

  • 2 tsp sencha green tea (loose leaf)

  • 45 slices fresh ginger

  • 1 tsp dried bitter melon

  • 2 cups filtered hot water (175°F / 80°C)

Instructions

 

  • Heat water to 175°F, avoid boiling to protect the tea leaves.

  • Add sencha tea leaves and ginger slices to your teapot or tea infuser.

  • Sprinkle in dried bitter melon to add a subtle bitter edge.

  • Pour hot water over the mixture. Steep for 3–4 minutes (up to 6 for stronger effect).

  • Stir gently to release flavors, then strain and serve.

  • In a ceramic or glass teapot, add ginger, lemon peel, and fennel seeds.

  • Pour hot water over the herbs and steep for 2 minutes.

  • Add sencha tea leaves and let steep another 3 minutes.

  • Strain into cups and serve warm. For iced tea, double the tea strength and pour over ice.
